Recipes | U champagne cake

For 6 people:

4 eggs, 1 glass of oil, 2 glasses of sugar, 3 glasses of flour, 1 packet of vanilla sugar, 1 packet of baking powder, 1 glass of Blanc de Blancs champagne.

Beat the egg yolks and sugar in a bowl until they are frothy and double in volume. (VERY IMPORTANT)
Little by little add the oil, the Blanc de Blancs brut champagne, the flour and the baking powder. Mix.

Beat the egg whites and add them slowly to the mixture, folding it gently so as not to make the egg whites fall.

Pour the mixture into a greased loaf tin.
Bake in a medium oven ( No.5 or 6) for 45 minutes.

Serve with chocolate mousse or custard.
